Pocket Apple Pie

Hi Everyone,

A friend of mine brought some granny smith apples to a dinner last time. Turned out he complained about how sour it was. So, I said to him deliberately " why don't you leave the apples with me, I can whip up some apple pies later! " I keep my promise.



Please don't scream, and don't kill this page yet! I think I have dedicated many of this page for apple pie recipes. I love and adore it dearly. I love eating apple pie to the point that no matter how full I am, I will eat it for sure! Scary, I know! But, who can resist the scent of freshly baked apple pie wafting in the air?! 



I would like to make a different pie this time, a pocket pie, perfect for picnic or snack on the run too. I used the same recipe (see here) as before, however I did alter it slightly since you do need a reasonably dry filling for this pie pocket.


Here is the alteration to my recipe :


Pocket Apple Pie

Ingredients :
500 gr granny smith apples,peeled, and chopped
1/2 cup sugar
2 tbsp rum
2 tsp ground all spice
3 tsp cornstarch
1 tbsp butter
3 sheets  store bought shortcrust pastry
 1 egg
Rainbow Sparkling Sugar

Directions:
1. Heat up the pan, add the butter until it melts
2. Add in the apple, rum, sugar, and all spice, let it simmers on a medium heat for 5-7 minutes
3. Dissolve cornstarch with a little water
4. Add the cornstrach mixture into the apple mixture, and mix it well until the mixture looks dry
5. Turn off the heat, and let it cool to room temperature
6. Thaw pastry as directed on the package
7. Pre-heat the oven to 180 C
8. Cut one sheet of pastry into 4 smaller squares
9. Place some of the filling on the middle of the bottom section(Imagine you divide the square pastry into top and bottom sections equally)
10. Make 3 incisions on the the middle of the top section
11. Brush the edges with egg wash*, fold the pastry
12. With a fork, secure the edges of the pastry
13. Brush the pastry with egg wash
14. Sprinkle some rainbow sparkling sugar on top
15. Bake in the oven for 23 minutes or until golden brown


* For the egg wash, just crack an egg, add 2 tsp water, and beat them well
