Bakmi Goreng (Indonesian Stir Fry Noodle)

Hi Everyone,

On Saturday afternoon, me, H and M went to sunday market at Paddington, the weather was just perfect. We had brunch, and took sometime to look around the market, and ended up buying some chocolates. I love their orange bliss.

After went home and stretched my legs, I had a sudden urge to cook this stir fry noodle. My mom used to cook this in a huge batch and I had it for lunch, dinner or even breakfast for the next morning. H was so happy when I said I want to cook this for dinner. It's difficult to name food that he doesn't like!

Indonesian fried chicken (Ayam goreng keremes)

Hi Everyone,

The cold winter is back. Something calming, and gratifying are so much needed at this time around. H asked me the other day to cook fried chicken. I could tell from his tone, he had longed for it far too long. Can you say no to such request?!! Well, I just couldn't. Last year was the last time I had this back in Indonesia. I missed it as much as H too.

This fried chicken had rescued my mom in so many occasion especially when she was too tired to prepare meals for us. This chicken is always served hot with some crunchy topping made out of the liquid where the chicken cooks in. Besides the fried chicken, we also had the fried tofu, and tempe which also boiled in the same spice mix like the chicken.

Ayam Bakar Pedas Manis/ Hot and Sweet BBQ Chicken

Hi there,
It's my first post for "Masak Bareng Yuuk!!!"
masakbareng
The theme for this month is Panganan Kaki Lima, which could be translated into hawker food.

Today, I picked Ayam Bakar which has become one of staple hawker food in Indonesia.
I used the recipe from Primarasa, it is called Ayam Bakar Pedas Manis.

And here is the recipe :

Ingredients :
1 kg chicken ( I used cornfed chicken)
8 shallots
4 cloves garlic
1 tsp white pepper
2 tsp salt
3 Indonesian Bay leaves
2 lemon grass
500 ml coconut juice

Basting Sauce :
50 gr red chilies
3 cloves garlic
1/2 tsp salt
2 tbsp oil
2 tbsp palm sugar
1 tbsp indonesian kecap manis
200 ml water

Tomato Sambal :
2 tbsp oil
8 red chilies
5 chili padi
3 shallot
1 medium size tomato
2 tsp belacan
1 tsp salt
2 tsp palm sugar

Directions :
1. Cut up the whole chicken into 4 pieces
2. Pound garlic, shallots, salt, and pepper in mortar and pestle until quite smooth
3. Rub the chicken with the spices, and set it aside for 30 minutes
4. Put the chicken in a pot cover with coconut juice (add a bit of water to cover the chicken completely)
5. Put in the bay leaf, lemon grass, and cook it slowly for about 1 hour, set it aside
6. Heat up your barbie, baste the chicken with the basting sauce for about 5 minutes on each side, and baste it again, until your liking.

Basting Sauce :
1. Pound the chilies, garlic and salt until it becomes a smooth paste
2. Cook the paste until fragrant and add palm sugar, kecap manis, and water, cook until it cooks completely

Tomato Sambal :
1. Heat up the oil, cook the chilies, chili padi, shallots, tomato, and belacan, until the tomato is soft enough to be mash
2. Mash the cooked mixture, and add salt and palm sugar, until it comes into a paste
3. Serve it with the chicken

The verdict : It is finger lickin !
^^
